The World No 1 fell to a 3-6, 6-2, 5-7 defeat in Melbourne as an inspired Keys claimed her maiden Grand Slam title.
Sabalenka was aiming to win a third consecutive Australian Open title, but the loss ended her 20-match winning streak at Melbourne Park.
The 26-year-old Belarusian's 20-match winning streak at hard-court Grand Slams was also broken after she won both the Australian Open and the US Open in 2024.
After Keys converted her second championship point with a superb forehand winner, a devastated Sabalenka expressed her frustration towards her team.
Sabalenka embraced and congratulated Keys, before breaking her racket and throwing it against her chair. The three-time major winner then sat with a towel over her head before leaving the court.
Jo Durie, a former world No 5 who was commentating on the match for Eurosport, took issue with Sabalenka's reaction.
"Well, it's a shame to see that from Sabalenka because respect to Madison Keys," Durie said. "The way she went about it, the belief she had in herself at the end. Great to see, congratulations
"Obviously devastating for Sabalenka, but respect for Madison Keys. She held her nerve. She was true to herself, she said she was going to go after it, whatever, in this match - and she did it!
"I think it's just a shame that she (Sabalenka) did that. I know that she is going for a third [title] and emotions are running high. It does [take something away from Keys' moment]."
Naomi Cavaday, who commentated with Durie, added: "I think maybe a little bit disappointing to see that reaction from Sabalenka. She's done enough winning in her career to know how to lose as well.
"But I suppose it does just show what it means to everyone, even going for three in a row as Sabalenka was. But it wasn't to be. It takes away from the moment for Maddie."
Sabalenka was full of praise for Keys in a classy speech during the trophy presentation: "It's OK, I hope I see you next year (looking at the champion's trophy)!
"First of all, Madison, wow. What a tournament. You have been fighting really hard to get this trophy, you have been playing unbelievable tennis, you crushed it tonight.
"Congrats to you and your team, really well deserved. Enjoy the celebration, enjoy the fun part.
"I want to say thank you to every one who makes this tournament happen, thank you for making my stay comfortable.
"I really feel at home every time I am here and even though I didn't get it this time I will be back stronger and will do my best next year.
"Thank you guys for an amazing atmosphere throughout. You guys are amazing."
