The 35-year-old ex-Manchester City, Bayern Munich and Lyon centre-back has joined the Austrian Bundesliga side following a season playing for Serie A side Salernitana.
He has signed a two-year deal with LASK to keep him at the club until 2026.
LASK CEO Dr. Siegmund Gruber told his club's website: "It is absolutely insane and unbelievable that we were able to bring Jerome Boateng, an exceptional player and model athlete who is so internationally sought-after, to LASK."
Managing Director of Sports Radovan Vujanovic added: "It is a great honour for us that a player of his class has chosen us and shows the development we have made as a club in recent years."
