The 27-year-old's existing deal expired at the end of June and he was mulling over his future but he has now decided to stay at the King Power Stadium for three more years.
The Nigeria international said: "It's really amazing to be a part of this journey going forward."
Elsewhere, Brighton have signed central midfielder Malick Yalcouye from Swedish club IFK Gothenburg on a five-year deal.
The 18-year-old holds dual nationality with Mali and Ivory Coast and played in the African Champions League for Ivorian club Mimosas before joining Gothenburg last year.
Brighton head coach Fabian Hurzeler said: "We are really pleased to bring Malick to the club.
"He is a talented midfielder with lots of potential to develop into a top-class player."
