The Ghanaian midfielder, whose fitness had been in question ahead of the match, started and completed the full 90 minutes, demonstrating his importance to Mikel Arteta's side.
His performance was capped by a crucial assist for William Saliba's second-half goal that sealed the win.
The match began with both teams showing intent, but the first half ended without a breakthrough despite chances for either side. Arsenal's midfield trio, anchored by Partey, gradually asserted control, stifling United's creativity and laying the groundwork for a commanding second half.
Arsenal opened the scoring early in the second half when Declan Rice's precise corner was met by Jurrien Timber, whose powerful header found the back of the net.
United nearly equalised in the 67th minute when Matthijs de Ligt's effort tested Arsenal goalkeeper David Raya. However, Raya's spectacular save kept the visitors at bay.
Just minutes later, Arsenal struck again from a set-piece. Bukayo Saka's corner found Partey at the far post, and his intelligent header back across goal set up Saliba, who scored.
The result extended Arsenal's unbeaten run at the Emirates to 13 matches in all competitions and brought them within seven points of league leaders Liverpool.
Reflecting on Partey's contribution, manager Mikel Arteta praised the midfielder's influence, saying, "Thomas brings control and vision to our game. Tonight, he was outstanding, both defensively and offensively."
Partey's latest performance underlined his value to the team, as Arsenal continue their push for a strong Premier League campaign.
