Stubbs struck 54 from just 34 balls, that included four 4s and four 6s, while captain Rishabh Pant hit 55 off 25 but Delhi were bowled out for 166 chasing an insurmountable target of 273.
Earlier, the Knight Riders scored the second highest total in IPL history as they reached 272-7 in their 20 overs.
There were contributions right down the order with opener Sunil Narine top-scoring with 85 off just 39 deliveries.
Narine added 60 inside the first five overs with opening partner Phil Salt (18) while number three Angkrish Raghuvanshi continued the good work with 54 off 27 balls.
West Indian Andre Russell then gave the innings a late boost amidst the carnage at the start with 41 from just 19 deliveries.
Proteas paceman Anrich Nortje, still feeling his way back into action after being out for a few months with a stress fracture, took three wickets but went for 59 runs in his four overs.
It was a third victory in three games for the top-of-the-table Knight Riders while Delhi fell to their third defeat in four matches.
