The Bok lineout legend already has experience with consultancy roles at several franchises, including his beloved Bulls and trans-Jukskei rival Lions.
Speaking to Sunday newspaper Rapport, Matfield confirmed he is moving into the international space.
"This position is more formal," the 127 cap veteran explained.
"I will fly to Japan twice to be involved in the Japanese camp there for two weeks before tests. I will also do weekly analysis of the other teams for them and forward plans."
Jones worked with Matfield and the rest of the Springboks' 2007 Rugby World Cup-winning squad as an assistant coach under Jake White. Matfield revealed he enjoyed the Australian in the Bok coaching setup.
"It's nice to get involved on an international level and work with Eddie," added the three-time Super Rugby winner.
"I've said a lot that I'm a big fan of Eddie."
Japan are set to kickoff their international season when they host England in Tokyo on 22 June as part of the Autumn Nations Series.
