The 23-year-old, who previously played for Glasgow Celtic, will now play professionally in his native country for the first time.
"With Moritz, we are signing a fast and creatively strong central defender who has proven his quality this season in the Champions League," said Schalke 04 acting sporting director Peter Knabel.
"We've been watching Moritz for some time and are happy to now be able to finalize the transfer."
Jenz, who was recalled from loan club Celtic by parent club FC Lorient, will join Schalke with an obligatory purchase clause in the new loan arrangement, in the event that the team can avoid relegation.
"I was delighted when I heard that Schalke were interested in me," said Jenz. "Of course, I know the table means that we have a tough road ahead. I'm nevertheless eager to tackle the task together with my new teammates."
The acquisition of Jenz comes as Schalke faces a dire need for defensive help. With half of the season now complete, the team has only got nine points and are bottom of the Bundesliga table, six points adrift of Hertha Berlin on 14 points.
Jenz could potentially start straight away alongside Japanese central defender Maya Yoshida, as injured centre back Sepp van den Berg, on loan from Liverpool, will need more time before returning to the starting XI.
